Extra Virgin olive oil

Olive oil is extracted by crushing the fruit of the olive plant. Its production process is incredible and simple. The olives have to be pressed to extract their oil but in modern methods, the olives are crushed, mixed together, and then the oil is separated from the pulp in a centrifuge. After centrifugation, a small amount of oil remains in the pomace. The remaining oil can be extracted using chemical solvents and is known as olive pomace oil. Pomace oil is regularly cheaper than ordinary olive oil and has a poor reputation. It is important to choose and buy the right type of olive oil. There are three main categories of olive oil — refined, virgin and extra virgin. Extra virgin olive oil is a less processed or refined type. More virgin olive oil is considered a healthier type of olive oil. It is extracted using natural methods and is standardized for purity and has some sensory properties such as taste and smell.

How to cook simple and quick spaghetti pasta?

Let's starts to make simple and quick spaghetti pasta:

Prepare all ingredients such as chopped tomatoes, onions, blend garlic paste, cut capsicum, boil lightly and cut sweet corn, chopped fresh coriander leaves and fresh mint and put aside.

I have two steps to make it.

1st step:

  1. First, take a deep pan and boil enough water in it.
  2. Add 1 tbsp oil. If you boil spaghetti with oil, it will not stick to each other while cooking.
  3. Add a little salt.
  4. After boiling water, add raw spaghetti. You can also break it up a bit if you want.
  5. Cook over medium heat for 12 minutes.
  6. Stir it in the middle with a fork and spoon. (Spaghetti can be broken if used with anything another than a fork).
  7. Once 95% cooked, strain it well using a Steiner.
  8. Put 2 tablespoons of filtered pasta water on one side.
  9. Thoroughly clean it with cold water.
  10. After cleaning, transfer to a plate.
  11. Cover with a lid so that the spaghetti does not dry out.

This method works perfectly well.

2nd step:

  1. First, take a hard anodised pan and put some oil or olive oil in it and let it heat up.
  2. After heating the oil, put 3–4 pieces garlic cloves, then add little oregano and saute for a few minutes.
  3. After, few minutes take out garlic cloves from pan then add chopped onion. It is essential for good taste. You can also use finely chopped onions.
  4. Add a little garlic paste. Finely chopped garlic can also be used for good taste. Fry on low heat for 2 minutes only.
  5. Then add thinly sliced capsicum. If you have capsicum at home and in different colours, you can use that too. Capsicum gives a good crunch to vegetarian spaghetti pasta. Cook over medium heat for 1 minute only.
  6. After 1 minute, add finely chopped red tomatoes using a sharp knife and add 2 tablespoons of filtered pasta water. Let the tomatoes not dry out, so add it. Mix it well and cook on medium flame, for 2 to 3 minutes and make a stir it lightly.
  7. Add sweet corn kernels. Make sure you have boiled the corn kernels completely. It can also be used in the microwave or on an open flame. Baby corn can also be used here, but be sure to chop the baby corn long and cook it lightly.
  8. Add the tomato ketchup. You can add chilli sauce if you want spiciness. Add chilli powder and little black pepper powder. Add salt to taste and mix well. Cook over medium heat, for 1-2 minutes and make a stir it lightly.
  9. Then add the cooked spaghetti. Quickly mix the spaghetti with the help of 2 forks.
  10. Cook the spaghetti over medium heat for 3 to 4 minutes and make a stir it lightly.

Now the spaghetti pasta is ready.

Put in the plate and put fried garlic cloves on the top. Add also some chopped fresh coriander leaves and fresh mint leaves.

Serve it immediately or let it cool completely to send it out and pack it in a non-airtight container.

Enjoy in lunch, dinner, pack for tiffin.
