Vegetable biryani is an aromatic, mouth watering and authentic beautiful famous dish and it is suitable for vegetarians. It is one of the most amazing delicious food that you can find everywhere in the world and it’s mixtured with various spices. It’s an interesting combination of rice and vegetables, and if you keep your heart into it, sure, people will love it. Vegetable biryani has been most Delicious, popular and is considered to be a luxurious treat to enjoy on a special event, festivals, wedding and occasions.

Vegetable biryani is prepared in three main stages, in the first stage long grain basmati rice is cooked with aromatic whole spices, in the second stage, vegetables are cooked with various spices and whole spices and yogurt and in the last stage vegetables and rice are mixed. Then boiled rice, vegetables and fried onions are made by dum and cooked on dum using the dum method. In the dum method (cooked on steam), the food is cooked in a steam-covered pot over low heat, which makes it extremely tasty and aromatic. You may think that vegetable biryani recipe requires a lot of ingredients and is very difficult to make but it is very easy to make and you can make biryani in 30 minutes.

I have share a delicious vegetable biryani recipe. It is a spacial recipe that can be made for several festivals, weddings, events and occasions.

Recipe for the vegetable biryani:


Recipe for rice:

  • 1 kg. Long grain premier basmati rice
  • 1 table spoon oil
  • 1 table spoon ghee
  • 2 pieces cloves
  • 2 pieces green cardamom
  • 4 pieces black pepper
  • 1 inch (2.54 cm) Cinnamon
  • 1 piece bay leaf
  • 1 piece black cardamom
  • ‍1/2 cup dried onion
  • 4 cups (0.95 l) boiled water
  • 1 table spoon yogurt
  • Salt as required.

Recipe for vegetable:

  • 2 table spoons oil
  • 1 piece bay leaf
  • 2 pieces green cardamom
  • 2 pieces cloves
  • 4 pieces black pepper hole
  • 1 inch (2.54 cm) cinnamon
  • 1 piece black cardamom
  • 1 piece small star anise
  • 1/2 cup tomatoes
  • 1/2 cup dried onion slice
  • 1 teaspoon turmeric powder
  • 1 table spoon chills powder
  • Salt as required
  • 1 cup boil potato
  • 1 cup cauliflower
  • 1/2 cup carrot
  • 1/4 fresh beans
  • 2 table spoons yogurt
  • 2 cups (0.47 l) boiled water
  • 1/2 cup tender green peas
  • 1 cup cottage cheese

For garnish: 

  • 1/4 cup pomegranate
  • Fresh mint leaf
  • Fresh coriander leaf

How to make delicious vegetable biryani?


Let's start to make delicious vegetable biryani:

  • First plan to make a delicious vegetable biryani and make ready all the tools to work.
  • Wash hands thoroughly in running water with soap and wear gloves in hands.
  • Prepare the vegetables such as, chop tomatoes, slice onions and fry, chop cauliflower florets, chop carrot, cut fresh beans, cut cheese and boil potato and remove its skin then cut, boil water and keep them aside for later use.

I have three steps to make Delicious vegetable biryani.

Let's start the first step, making the rice for biryani:

  1. Take 1 kg. Premium quality basmati rice and soak in water for 20 minutes then wash until the water run clean.
  2. Turn on gas and take a pan and put 1 table spoon ghee on the pan along with the little oil.
  3. Then, add 1 inch (2.54 cm) cinnamon, 1 piece bay leaf, 4 pieces black pepper whole, 2 pieces green cardamom, 2 pieces cloves and 1 piece black cardamon. Fry them till get on aroma.
  4. After, add some dried onions and stir it lightly and immediately add 4 cups (0.95 l) of boiled water.
  5. Now put salt as required and 1 table spoon yogurt. Then stir it lightly.
  6. Wait until the water to boil.
  7. After, the water boiled add soaked rice. Just stir lightly this. Make sure the rice is not broken and wait to get half done.
  8. Now quickly check the rice.
  9. After, half cooked, drain the remaining water.
  10. Now the rice is half cooked, drained and ready.
  11. Now add little saffron color on the top. (You can use yellow color instance of saffron color). 
Now the biryani rice is ready.

Let's start the second step, making the vegetable for biryani:

  1. Take a little oil and put on the pan and hit this on the medium flame.
  2. Then add 1 inch (2.54 cm) cinnamon stick, 1 piece bay leaf, 4 pieces black pepper, 2 pieces green cardamom and 2 pieces cloves. We let cook till a minute. After, add 1 cup boiled potato.
  3. Put the dried onions on the pan and lightly stir them. Make sure it doesn't burn.
  4. After onion and potato getting beautiful golden color add 1/2 cup chopped tomatoes, 1 teaspoon turmeric powder, 1 table spoon red chills powder and then salt as required.
  5. Then make stir it lightly.
  6. Now add 1 cup cauliflower, 1/4 cup fresh beans, 1/2 cup carrot and 2 table spoons yogurt. Make a stir them lightly. Make sure the vegetables are starts cooking lightly.
  7. Put 2 cups (0.47 l) boiled water.
  8. Don't forget to put some tender green peas.
Now the vegetable is ready.

Now the half cooked rice and vegetable both are ready.

Let's start the final step, making the delicious vegetable biryani:

  1. Now place the vegetable in a big pan. This is the pan in which our assembling a beautiful vegetable biryani. Set the vegetable everywhere in the pan.
  2. Then put Chuck of cottage cheese on the top of the vegetables.
  3. Now put half cooked drained rice on top of the vegetables.
  4. Make sure the rice is not broken. Just move it lightly. Cover all the vegetables.
  5. Don't press the rice because we don't want to break the drain rice.
  6. Now place the pan on dum for 5 to 10 minutes.
  7. Make the very low flame and cover the pan with tight lid.
  8. After, 5 to 10 minutes check the biryani. If the biryani is cooked, turn off the gas.
Wow! Delicious vegetable biryani is ready.

Let's begin the plating.
  • Now transfer this serving plate and add some dry fried onion, some fresh pomegranates, some fresh mint leave and some fresh coriander leaves.
  • Now beautiful aromatic delicious vegetable biryani is ready.
